My Nanna Chaffer's recipe for Lemon Barley water:
3/4 of a cup of pearl barley
Finely grated zest and juice of two lemons
1/2 a cup of honey (more or less)
6 cups of water
1. Rinse the barley in a sieve
2. Place barley in a saucepan with the lemon zest and water
3. Boil over a medium heat for 10 minutes then strain off the liquid into a large jug
4. Stir in the honey and lemon juice - adjust sweetness to taste
5. chill in the fridge once cool
6. Keeps in the fridge for about a week.

The only problem I can see is leaving it for a week in the fridge, I bet not many jugs go untouched for a week.
