the food is mostly beyond their control as it is franchised out.
The advantage is that they get a set amount of money every game be it a JPT 1st round against a nobody team or an FA Cup against Rovers.

If the club put on a specific promotional entrance price they can't recoup the losses on the ground as there is next to nowt to spend money on.
I have always advocated that the club should run the outlets via a catering manager (its only half a dozen hours at the most) but in retrospect, bearing in mind the lack of stock on the bars some times, maybe thats a bad idea!
But seriously, without direct control of the food, without stock (and lighting) in the alcohol bars, without a proper place to buy programmes, without a shop large enough for people to browse around then the club is never going to fully exploit the money that people may wish to spend on a matchday.
