i did deviate slightly, i had on the bone, so i boned it and made a quick stock with a veg stock cube and the bones, with a pinch of thyme, sage.

browned the meat, then poured over the stock for 1 min, then took the meat out and put the onions in the stock, let the onions absorb it, and then put it all together stuck the lid on

plus Deco can have the bones after his tea!

If it wasn't lamb(which I can't eat) I would be round there for a plateful...it sounds delicious.

as promised, just left it in the oven on the lowest of low now, for tea time (not dinner time, as some would say, thats in middle of the day, and its not lunch).

Hi there,
Just a little information on the origins of Lancashire Hot Pot.

This was a dish cooked by families where both man and wife were working full time, usually in the cotton industry. The wife would prepare the dish, put it into the oven, and when both came home at lunchtime, the meal was ready!

A little story that happened to me!
My Mother who worked in the cotton industry prepared a dish something similar to a hot pot, and put it on the sideboard with a note attached, which read “Ronnie (my Brother) when you go to school, take the dish to Auntie Mary’s”. My Aunt (who lived across the road) would then put the dish into her oven, so that at lunchtime when my Mother came home it would be ready.
When Mother came home at lunchtime the dish was still on the sideboard, with note reading:
“I’m late for school; our Philip will take the dish to Auntie Mary’s. Sorry Mum but I’m also late”.
My bum was sore for days after that.

Cheers
