What is the cheapest, healthy recipe you know of?
 
It's pretty much an expensive life being a student, and I find that when it gets to the end of the term I am eating pretty much any rubbish I can afford in order to stay alive. Right now I'm eating a shepherds pie that cost me 70p from the spar as it goes out of date today and the shop closes in 2 hours, not many people around etc. It tastes alright, better than noodles and such, but it's not good for me and I want to be healthier.

I know of all the obvious things like spaghetti bolognese, chilli con carne... homemade shepherds pie...

but what else could I eat that doesn't cost the earth? I love broths and soups so any of your favourite recipes would be great.

I've been watching economy gastronomy but I still think it's very boring to stick to the basic 'bed rock' thing every day.

I love eating salmon and other fish too, so any ideas of what I could make to make the most out of the fish would be great :)

Lambs liver is very cheap and is delicious, lean and tender.
Saute in butter with onions and garlic.
I eat mashed potaoes and carrots with it

When I was a student we used to make a sort of lasagne with baked beans and cottage cheese.

Fish is good for you, especially oily fish. Mackerel is very tasty, filleted, dotted with butter and grilled. Salmon too is very versatile, you can grill it, poach it (in milk or water) pan fry it or bake it in the oven and it's not expensive.

Baked potatoes......lots of different fillings......Morrisons do a bag of grated cheese for 50p....and an american salad for 50p (Ok so there isn't a lot in the bag, but plenty for one person.....it would do me twice) tomatoes are cheap. Coleslaw too......Home made cottage pie doesn't take much making and is nutritious.
You just need to check out the offers the different supermarkets have on at the moment....Aldi have avocados at 29p....cucumber 29p......little gem lettuce 29p......Mango 29p......and lidl have lots of offers on at the moment.
Time and imagination might be required, but healthy eating on a budget is possible.

The Boot and Shoe do a cracking sunday lunch. The Bowling Green, on the opposite side of Booths, does a Sunday Lunch for £3.95

BirdsEye frozen reggae reggae chicken or chicken chargrills 2 pieces for £1. Get 4 boxes of them and a long life packet of tortilla wraps and that's 8 lunches for about £5

I don't eat lunch. That is one of the unnecessary meals of the day. Along with breakfast. I only wake up for dinner. And I don't want to eat something made by birdseye every day for my dinner. It's certainly not what I consider healthy either.

Healthy = fresh.

Have 2 and it's dinner. 100% chicken breast, high protein, low salt, low fat, low saturated fat - don't pay attention to calories myself but can't see it being too high either - fail to see what is unhealthy about it, enlighten me ?

Ive been watching my weight recently and also expense, so eat a lot of very simple healthy stuff! Such as Stir Frys, Baked Spuds with various fillings, Beans on Toast etc. You can get large bags of Stir Fry veg at places like Asda for as little as 50p which can do for 2 meals. The secret i think is ...depending on whether you like spices or not... to add as much flavour as you can..i love chilli and garlic, again you can get these fresh and cheap and because they are strong flavours you feel like you are eating a lot, even though you arnt! Bottled spicey sauces near there sell by date are also good in stir frys. I've even managed to buy Smoked Salmon very cheap at Asda recently, they sell smoked salmon scraps, pre-packed for only 88p!! Again lots of flavour and really good for you! I would echo another post about Lambs Liver too, very cheap and full of B vitamins, again because i like spicey food, i pan fry it in a little oil or butter along with chopped garlic and chilli...lovely! Supermarket Cheese is pretty cheap usually around £1.50 for own brand 200grm pack, great grated with spuds..on toast..or grilled with an egg on top....oh and theres another...if you buy the cheapest supermarket eggs they are around 88p for 6!!

soup/stew, add some pasta and lentils and its pretty filling :)
i made fritata the other day, fried up some veg (i had pre boiled potatoes,courgettes,mushrooms, peas) and a bit of ham then mixed it with some eggs in the frying pan, left to cook then grilled the top... bit like an omellette but thicker, was nice :)

Cheese is fine for the cheap meals but remember its pretty much pure saturated fat so aint doing the healthy side of things any good.

Healthy food at a reasonable price try the veggie options - Quorn and Linda McCartney stuff is often on special offer so you can have a meal for about the quid mark. No doubt it doesn't taste as good as real meat but it is ridiculously healthy again high protein low fat low sat fat low salt.

I have been eating stir fry, I like throwing my salmon in it. I won't buy battery farmed eggs because I believe you get quality out of what is put into the animal. I wouldn't buy meat from the supermarket either if it wasn't from a good, British source, but I'd rather buy from the local butcher when I get chance. Otherwise I do without.

The only thing that I eat or drink that I'd consider unethical is Coca-Cola. Everything else tends to be locally sourced. But I want to stretch it out to get the best that I can out of it. Rather than hunting down cheap meals.

I can eat my 70p shepherds pie when I'm on my last £2, but I'd like to be able to avoid that in future by being as efficient as possible with what I actually cook. Like, if I buy a chicken, I'd like to know how to make a soup the next day out of the carcass... for example.

I don't eat processed foods if I can help it. I don't class it as 'healthy' if it's full of crap to keep it all stuck together either.

Did you watch that episode of wife swap with the hunter husband who did actually bring home roadkill to eat?

We have rabbits running around campus and a gunsmith in town. How easy do you reckon I could get a licence?

And how quick do you reckon I'd get caught shooting rabbits on campus :p

I'm struggling to see what is so difficult about this concept.

put cheap ingredients in rather than the expensive version .. that will save you money ...
by the way on the sainsbury's website it says salmon fillet basics 215g is £7.98 kg .. so works out about £2 .. you could get 2 meals out of it .. spuds - make potato wedges easy enough or jacket spuds or chips or boiled or mash em ... or a salad .. buy a bag of salad and split it for a couple of days ... even buy frozen veg .. works out cheaper than fresh ..

Haha you just reminded me of something that happened to me the other day.

During summer, international students move onto campus and I made friends with some Americans outside Sainsbury's (last week whilst I was drunk and just walking past, social butterfly that I am) and I bumped into one of them on tuesday so we went for a walk. Anyway, turned out he'd never seen a nettle before and we were walking past a field with two ponies in it and he tried to grab a full bunch of nettles to feed to it! With his bare hand!

I almost wet myself, it was hilarious.

Nothing is difficult about the concept, it is simply a different one to that which you started the thread with.

And emasmum I really cannot see what is unhealthy about frozen chicken.

would it not be cheaper to buy two 2ltr bottles of coca cola epsecially if on offer in a twin pack

not sure on ml of cans but i think 4 ltrs may be more than teh amount gotten buying cans

Coca Cola tastes better from a can. Plus an open bottle goes flatter faster.

I only drink 1 can a day... two at most :p that'd last me over 2 weeks.

It is a tomato based marinade, it would inevitably be too tart without a bit of sugar. And apologies, I listed only the ingredients of the marinade and glaze, I thought the chicken breast was pretty much given.

Apart from the fact that the chicken breast is the most important part and is often pumped with water and chemicals to hold it all together in those sorts of products?

There was a programme on the BBC once about food. After seeing what happened to chicken and other types of meat to get the most out of it, I think I'd rather eat none than fill my body with crap like that.

Then there is the packaging that costs money, the trays of fresh chicken in supermarkets can't be recycled most of the time either. The list is endless with problems, which is why I prefer fresh products from the butcher and the market.

And recipes, that are cheap, i.e. not full of expensive herbs and spices and made with simple wholesome ingredients, that I can live off.

I never said I was being cheap, just that I want it to be cheap i.e. reasonable, because I said I like eating bloody salmon and that isn't what students normally class as cheap, but I want it to be efficient in that I can make the most out of it.

For example, I can make two meals out of a shepherds pie made with good, basic ingredients and it lasts. Bolognese and chilli can be frozen. It's just boring eating them all the time.

Blazey......That kind of arrogant attitude just deserves contempt and i personally shan't bother replying to one of your infantile postings again!! From someone who placed no boundary's on the content other than healthy and cheap...you have basically turned your conditions to Free Range, Organic, Natural produce which you dont want to source at a Supermarket. In your intial post you refer to a Spar product..so people then quote accordingly!! Why not state that in your original post then people dont waste there own time....which strange as it may seem...is every bit as valuable as yours...so that we could answer your queries in a more appropriate manner!! I suppose it sums up a student mentality though...lets talk all day about irrelevent things!!

When making soup from a chicken carcass, if there's a lot on meat left on the carcass I remove most of it first then I just break the carcass up, put it in a deep pan and cover it with water and add a stock cube (chicken oxo or Knorr). I like to add a couple of handfuls of pearl barley too. I boil it then simmer it for 2 or 3 hours, more if possible, then strain it to remove the bones. Next I cut up any meat I'd saved and add that, a chopped onion and chopped carrots, any vegetables I have to hand, salt and pepper and simmer again for about an hour. It's cheap and very nutritious.

A tip: I have an electric Slow Cooker which I use for this but before I had it I used to use a pan with a heavy bottom. Once I'd got it simmering I would stand the pan on a trivet (dead cheap at T J Hughes) and light a couple of tea-lights underneath it. Ideal for simmering and costs only pence compared to using your gas or electricity.

Yes, my point was that it gets to the point where I haven't got money to eat properly when I'm stuck working all hours of the day at University during my summer, so I want to be more efficient when I DO have money so then I don't have to live off rubbish.

Locally sourced food isn't irrelevant, it's fundamental to the British economy and people would do well to remember that we have a very accessible farming industry on our doorsteps that is struggling because people insist on buying cheap rubbish instead.

I never even mentioned Organic. I don't buy into the 'organic' trade because it's a farce. I just don't see why I would want to eat something that has been grinded through the mill and back, coated in bread crumbs or a marinade that I could have made myself with less of the crap in it, then slapped in the middle of a wrap under the false-pretence of 'healthy'.

I'm 20 years old and stressed out and hormonal. I want to eat a decent meal. I haven't seen friends and family for weeks because I've had to work and study all day and night at university in order to pay my way through University.

If you don't want to make my day a bit better by using some common sense and not suggesting I eat even more crap out of a cardboard box or something that is unethical, then I suggest you don't post to me at all. I'll take you up on the offer. Because I wouldn't have a slave for convenience, so I don't see why I'd consume a badly treated animal for convenience either, economic or otherwise.

Also, students work damn hard to be able to talk about things that you think are irrelevant and pointless. Some of them make careers out of talking about those things and they make a MASSIVE difference to your liberty, equality and general well-being.

I just want to eat a decent home-cooked meal. I'm not asking for much. I asked clearly for RECIPES. How many recipes do you see in cookery books that say 'cook your Birds eye chicken gridlers' ?

The reason I'm NOT looking in a cookery book myself is that often the recipes have expensive ingredients that aren't necessarily important to the meal or can be replaced with cheaper ones, and student cookbooks are all full of the same stuff that I can ALREADY make.

I don't need your patronising comments. I don't need snide remarks about me being a student.

Well,well,well, with nothing better to do this fine Sunday morning I stumbled upon this thread,and I am so glad I did................I haven't laughed so much in ages!

After reading all the posts and 'digesting' (no pun intended!) the contents thereof,I should like to add my 2 Penneth worth If I may:-

Blazey, my suggeston is quite simple.............try eating the 'High Horse' you are currently perched upon,It wouldnt cost you anything, but it would help you in oh so many ways.......trust me.

i regularly feed myself , my other half and my little girl for under a fiver and the majority of the time I do it without resorting to prepacked items or pretension!!!! But not everything that comes pre packed is bad for you. Try getting some nutrition books out of the uni library, I highly recommend McArdle, Katch & Katch's book Sports and Exercise Nutrition, 3rd edition. It makes for interesting reading if you really want to know about what you need from food.

The one thing I do think you're missing the point on Blazey is the herbs and spices bit. If you buy supermarkets own brand dried herbs and spices they are cheap and last a long time especially if you're only cooking for 1. I know you want fresh but with herbs and spices it is simply fresh herbs and spices, freeze dried and ground or chopped, so essentially all you are doing is rehydrating them.

best thing to do Blazey is get yourself a slow cooker, you can buy cheap cuts of meat from the butcher (keeping produce local) then go down to the market and get lots of veggies (local produce again) and shove them all in the slow cooker, with a decent sized slow cooker you can get 3/4 meals out of it, if you have use of a freezer you could freeze them and eat whenever, i love my s/c, i make chicken, stews etc all the time, stick it on before you go to Uni in the morning and thats tea done for when you get home, with stews you can always drain off the unwanted liquid and make a pie out of it, pastry aint hard to make and the unwanted liquid can be turned into gravy

slow cookers are fairly cheap, usually under £15 but worth their weight in gold

I have a big slow cooker that I got from freecycle.
It is ideal for bulk cooking and freezing the surplus.
I have a very small kitchen and worktop space is precious & scarce.
Because the cooker is stored away I don't bother to use it as much as I could do.
I have been on the lookout for a small version (1.5ltre) and noticed that Argos have them for a tenner.
I have ended up buying a posh steel one from an ebay shop for £17 inc P&P.

Blazey the book i mentioned earlier is not a cookbook, nor is it an ingredients manual or anything like that, but it does tell you a lot about how your body works and how much 'fuel' your body needs. This is actually a sports nutrition book which is a little different than an everyday nutrition book, atheletes need higher protein and carb levels etc. There are plenty of online websites that will tell you the caloric value of foods and what foods are healthy, most of which will also supply a range of recipes.

Now i'm-not getting involved in the argument but here is my slant on cheapo healthy cooking

chicken, buy a cheap chicken of whatever provenance suits yopur morals, i'm happy with 3 quid from tesco, you may see different.

Learn how to joint it, you will get 2 breasts< two good sized legs and chuck the wings in a bag in the freezer till you have a decent bag full.

The breasts can be chopped for curries, stuffed with a bit of cheese and wrapped in a slice of bacon, poached in a little garlic and wine, grlled and toppd with a tomatoe puree spikes with herbs or spices of choice , braised in a stew with veg, flattened and stuffed with garlic butter, chpped mushrooms or a stuffing of sage and chopped veg.

The legs can be roasted, stewed or souped with a mix of barle, lentels, split peas etc (sod as broth mix in supermarkets) and whatever veg you have. Top with dumplings for extra yum.

Wings, when you have a decent bag, defrost, mix up tom puree, olive oil, chilli powder and garlic and shake in the bag. Leave overnight to take the flavour then grull or BBQ.

Beef, cheap cuts have most flavour but need longer to cook. When making bolognaise, make in a large batch, then make up lasagnes, canelloni, and save some for spag bol as it is.

Lamb

Only buy when in season as it too expensive otherwise. Then get cuts like shoulder and legs

Try looking at the GI index ... gives foods that will keep you going longer, sustains blood sugars, albeit not always inexpensive. Is all about healthy lifestyle eating, not necessarily to slim, etc :-

I cover the carcass so the pan's about half full. The liquid does reduce when it's cooking but if you use too much water it won't have as much flavour. If it reduces too much you can always add more water, a bit at a time.

Another tip is get one of those net pouches they use for washing tablets but keep it for cooking only. Put the carcass bones in it as the spine falls into lots of tiny bones which are a pain to strain out. With them in the pouch you can easily lift it out and pick the meat out.

With any beef dishes ask the butcher for a bone for your dog even if you dont have one. When you are using your oven for other things roast the bones then when making a beef stew throw the bone in for extra flavour.

By 'eck, you must use some giant washing tablets to get a carcass in the little bag. :D It's a lot easier to strain the soup through a flour seive. ;)

I do quite like a bit of tripe actually! Hard to come by in a lot of places so I do like to get a bit when I'm home off the market.

As for work, I've had three jobs over Summer. One week I was contracted to work 88hrs, and I didn't complain once even though I had to put up with a patronising old fool who isn't going to be employed again by the people I work for.

Wisdom doesn't just come from getting old. Some people could do with learning that before they start preaching at me.

And I'd like a slow cooker but it just seems like another thing to take home at the end of the year. And people are stupid and pull out plugs as we don't have many plug sockets in the kitchens. So I can see myself coming home to disappointment quite often!

I do like the thought of making chicken soup though and broths. Especially as I can freeze it.

And the thing with herbs is that they're a costly item when other people use them. I live on a £10-15 shopping budget most weeks. Living with other students, it's easy for them to use up all your herbs and spices. I buy the basics for my spag bol and chilli, but that's about it. And I've no problem with dried produce, I've just got a problem with things that have preservatives and silly amounts of sugar added when you wouldn't dream of putting sugar into it if you were cooking it from scratch. Not to mention salt.

And I wouldn't mind trying horse, I hear it's a very good meat for you, very lean. I'm not sure where I'd leave it to hang though.

:)Most supermarkets do a "value" root vegetable pack.. great for making a lovely root vegetable soup... Tasty.. (even better if you roast the veggies first !)....or there is good ol' fashioned broth you can't beat that... :):)

Have you tried the "beyond baked beans" book??... there are some tasty recipes in there.... a few of my uni friends swear by that book...:)

Why don't you try getting your herbs and spices from one of the local asian shops...??... you get far more for your money from these shops than you do at your local supermarkets...:)

I'm just making some cream of brocolli soup and homemade bread.. about 90p for a big pan full, as brocolli is only 50p at lidl.. it really yummy too:D:D

Here we go....a very easy recipe...:)

1 large onion diced
2 medium potatoes diced
1lb of brocolli
400ml chicken or veg stock
100ml cream (you can use milk if you prefer)
salt and pepper to taste

saute the onions (don't colour, will make soup a touch bitter)

add diced potatoes and saute those for 5 mins

add stock and simmer until tender

cut the "stalky" ends off the brocolli and chop into small pieces
add these to the pan and cook until tender

add salt and pepper

chop the brocolli florets (quite small).. add these to the pan...
don't put a lid on the pan as the brocolli will go a murky green
when tender add the cream and blitz until smooth..

yummy:D.. you can also add a bit of stilton for a richer tasting soup...

I guess Somerfield is the cheapest supermarket in Lancaster but it doesn't have a very good choice of products and I find it to be very limiting. I love Sainsbury's but it can be expensive at times.

I'd kill for a morrissons, I like that supermarket!

Pedant in me says you meant sweat not saute, sweat is over a low heat to soften saute is over a very high heat to brown as quickly as possible. Otherwise, nice recipe, you can of course use more stalk that you have saved by freezing when you are doing broccli florets as a veg.

The true sign of thrift cooking is never throwing anything away. Use leftovers etc as other stuff the following days.... :D

Making extra portions of things all at the same time is a good idea. Every now and then I have a big 'making' day. I used to make about three dishes in one afternoon, with very few ingredients then freeze portions. I haven't done that for a while because ironically, I'm too busy.

Also, pastry, it's a lot cheaper if you make your own and you can make a right big batch and freeze balls of it. It means that you only need to defrost a ball, roll it out and you've got a pie topping.

Yes I do have a freezer.

I really love cooking, especially for my friends. A lot of my friends don't eat very well so I love cooking up proper meals for them every now and again! I can't wait for term to start now so then I can try these soups and hopefully be a bit creative so I can make my own special soup haha.

I once cooked my mum a rabbit as well and she wouldn't eat it :p my little brother loved it though. yum yum

Have you thought of making something of your enjoyment of cooking for your friends?
Why not offer a basic catering service where you cook and they pay you. Eg if it costs you 3 ponds to make a load of spag bol for 4 of you they pay a quid each.

You get a meal for free, they get a decent meal cheap.

You never know it might catch on, Blazeys home cooked nosh. I want 10% of anything you sell the company for! :D

Chop a large onion small, simmer in a drop of water, a load of potatoes sliced small into the same pan, top uo the water to just cover, add macedinoine of veg, add salt, slowly simmer until potatoes break when poked with a spoon, add cooked lamb or raw ground beef, let simmer until beef is cooked or simmer a kittle longer if using left over lamb ( to extract the flavour). thicken the liquid with gravy granules to suit. If you want to be really posh, transform the Stewed Potatoes into potato pi by adding a simple pastry crust = potato pie. Accrington Soul Food

Ok folks, here we go with a recipe from the true north, strong and free, eh.

Newfoundland Flipper Pie:

2 seal flippers
1 small trunip, cubed
3 carrots, sliced
2 onions, sliced
1 parsnip, sliced
2 1/2 cups of water
1 1/2 ounces of screech
1/2 lb fat back pork
2 tbsp vinegar

Dumpling Pastry:

1 1/2 cups flour
2 tsp baking powder
small pat of butter

Cut all fat and slag from flippers, place them in a deep dish and add enough boiling water to cover, add vinegar and set aside to cool. Then wipe flippers dry with a paper towel and place in a baking pan or large casserole dish. Add pepper and salt to taste, cover with sliced onions and sliced fat pork, dribble the screech over the contents. Cover and cook for two hours at 375 degrees. Boil turnip, carrots and parsnip for 20 min. When they are done, place them in a baking dish along with flippers. Use vegetable water for gravy, thickened with flour. Make dumpling pastry an pat over flippers and vegetables. Cover and bake gently until pastry is done ... about 15 min.

Enjoy ... I suggest drinking a hell of a lot more screech.

A friend of mine, who was born in Come-by-Chance, Newfoundland, informs me that real Newfoundlanders add swish to the mix in flipper pie, not screech. I guess screech is for wimps; real newfies drink swish.

You could also use cauliflower instead of brocolli for the soup, and do try adding a bit of blue cheese to give a rich creamy flavour, mmmmm delicious!! Lovely with some crusty bread.

I've got quite a few tried and tested soups and casseroles which are extremely cheap to cook, can be frozen and are healthy.Let me know and i can e mail them to you.
