Only just seen this one about the tripe shop and I think I've replied to the wrong person!!
As usual don't know what the heck I'm doing on this forum!!
Anyhow, I remember the Tripe shop very well because my friend Susan lived in the decorator's shop Wolstencroft's) just lower down and my grandad used to but a 'bubbly' kind of tripe because he was convinced it would make his hair grow(bald as a badger!|!)

I remember the tripe shop, used to go on a Saturday morning with my mum for tripe chopped up and lots of salt and pepper. yummy. She used to buy a cow heel to make steak and cow heel pie, Desperate Dan stuff, stuck to your ribs!!

Dya know I cringe at some of the stuff that used to be regularly eaten yrs back. I rem my mum used to tell me some right wierd tales. She once had my little lad eatin roll mops, he loved em at the time but wouldnt tough them these days. he was only about 5 at time and I went mad when I found out cus I thought it was disgusting lol!!!

Sound a bit too continental, to have been on sale in Ossy.
