You lot said to me us southerners are tight, and grumpy and as you go north from tealeaf land you get friendly and generous. SO going by that Spuggiej must be the most friendliest and most generous on accyweb. !

Chances are the meat expands as the egg is cooked before being put in the sausage meat.

It will be the mechanical process of putting the eggs in the sausage meat.
Anyway you shouldnt be eating scotch egss they are full of salt, very bad for you, thats without going in to the content of the sausage meat.

The egg is cooked twice though isn't it? Maybe that could make it shrink. I can't remember if home-made ones shrink. It's so long since I made any.

Was it scrambled egg? I've had picnic eggs, made with chopped hard-boiled eggs, but scrambled sounds horrible.
