Things that need long cooking are fine for slow cooking, with the added advantage that cheap meat cuts come out tender. The main thing to remember with slow cooking is that no liquid gets steamed off, so if you put too much liquid in you are stuck with it. Another tip - put the meat at the bottom below the veg so that it gets more of the heat.

Thanks for the info and the link. I think my problem was that everything seemed a little watery, which as you say is because nothing gets steamed off.

You were probably worried that it would boil dry and burn - be assured - it wont

That's true.... I have to leave mine for 11 hours or more while I'm at work, so I think I was afraid that it would boil dry. It's pretty good though, as when it finishes cooking it just keeps the food warm until you turn it off.
I'm going to make something in it next week.

just seen this - persevere TM. paris uses a slow cooker regular for chicken broth, lamb hotpot,beef stew etc n they are great.
