I never weigh the ingredients when I make pancake batter - it's all done by Eye. As I make them quite often, I'm not sure if we'll have them tomorrow. Depends how I feel.
I like lemon and sugar on mine, sometimes maple syrup. My husband would only have his with strawberry jam and our Laura insists on chocolate sauce. What's your choice of filling?

I'm the same as you, Westender. I like lemon and sugar on mine. I can't be doing with all these fancy fillings.

Lemon and sugar on pancakes makes them all soggy and rubbish. I prefer them normal and bland yum yum

You have to get the lemon juice quantity just right to avoid sogginess. It can be done, with practise.
The best way to eat pancakes, well crêpes, is to lightly flambeau the surface with brandy and serve with ice cream and Baileys.

i still prefer them plain. i dont buy lemons or sugar so i'd have to buy some especially and its too much hassle.

I usually buy the ready made mix in a packet, reason is that they turn out better than the home made ones, its too hard to get the mixture just right so the pancakes are not too watery, my kids end up walking out of the kitchen because it takes too long then i end up going to the shop to buy them readymade, i do enjoy pancakes with lemon and sugar but they have to be eaten as soon as youve made them otherwise they taste like cold soggy yorkshire puds
