It doesn't! I wouldn't mind that, though, I love the fat on a pork chop - or a lamb one come to that.

Re: Tripe!!!! Would you eat it????
Agreed fat from chops etc. is scrummy.
Tripe on the other hand, needs so much salt and vinegar to make it taste somewhere near palatable.

Re: Tripe!!!! Would you eat it????
Haslet is made from brains and offal, as far as I remember. It's very tasty. I like brawn too, which is similar but not so spicy.
I think I have very "basic" tastes. I love tripe, adore black pudding, can't understand why people cut the fat off meat or scrape the skin off flat-fish (it's lovely). I'm a sucker for beef pies with a thick layer of aspic jelly on top. I relish a plate of mussels (fresh, not the pickled ones) and oysters are to die for and, yes, I like jellied eels too.
Unfortunately I have high blood pressure and my cholesterol level has to be controlled by statins so I can't indulge in my "treats" as often as I would like. Life's a bitch, isn't it?

Re: Tripe!!!! Would you eat it????
The haslet you get in Asda etc hasn't seen a brian etc in its life. Its just sausage meat with spices.
Tripe is lovely.
As for Black Pud, there is a whole newsgroup who discuss the merits of BP.
Mez, Pendy and I had a good chat at teh meet about all this sort of stuff.

Forget it, Janet. I asked our butcher in the village what he makes it from and he said he only uses prime pork - but he would say that wouldn't he? When I said I'd prefer if it was made from brains he said oh yes, it could be made from that. He didn't want to lose a sale.
Has anyone ever had lambs' fries? My mother gave them to me for years before she told me what they were. (Hint - they come in pairs).
