Christmas Recipes And Cooking Tips

Got the idea from another forum so thought I would help out with the festivities on here;

First tip : How To Cook A Duck

Preparing and cooking a duck is like making love to a beautiful woman.

You must moisten her skin before going in with a good stuffing. Get things really hot before you start roasting your bird. Sometimes tying the legs together helps.

Baste liberally with your fat & once done, rest for a while to ensure that no juices are lost.

Make sure it's well hung, before you pluck it.

Re: Christmas Recipes And Cooking Tips

what stuffing do you use dave?

And what do you use to stuff it with - fingers or a long thing that looks like it could ram it into all the nooks and crannies inside the bird?

This is just another snippet of useless info gathered in a long life--
'Not many people know that ' the word for chestnuts in Italian is the Italian slang word for 'balls' (Christmas balls of course )

I like chestnut stuffing
