just in case you need this today !

Basic pancake mix

110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g / 2oz butter
serve with what you like sugar lemon or orange etc

sift the flour and salt into a large mixing bowl
make a well in the centre of the flour and break in the eggs
whisk together
next gradually add the milk and water mix still whisking
any lumps will disappear as you whisk
melt the butter add 2 tbsp. of the butter to the batter mix and whisk in
use the rest of the butter to lubricate the pan
get the pan very hot then turn heat down to medium
pore enough batter into the pan to just cover the base and cook till golden brown turn or if you think your good enough flip over and cook other side
put your favourite topping on and enjoy
I will be having a few today for tea
PS don't buy the packet junk from the shop make your own much better

My Dad used to make these for us. I can still taste how good they were, all covered in sugar and lemon juice!

I have never been a big fan of pancakes...but would never resort to packet mix...same with Yorkshire pudding....I make my own they are so much better(and I'm not bragging...it is what other people have told me)

Any food mass produced is crap compared to Home made, not rocket science, but probably is to some these days.

Just in from the Breakfast Club Spitalfields in the soft South. The All American.. Eggs, streaky bacon, sausage, fried potatoes and maple syrup. The pancake was the edible plate.
Calories don't count on Shrove Tuesday
